| 4 | cups peeled and cubed potatoes |
| 1 | tablespoon minced garlic (or 1-1/2 teaspoons garlic powder) |
| 2 | tablespoons - 1/4 cup skim milk |
| 1 | tablespoon light margarine (Smart Balance Light is recommended) |
| 2 | tablespoons grated Parmesan cheese |
| 1/4 | teaspoon salt |
| dash | pepper, to taste |
Place garlic and potatoes in a saucepan. Cover with water. Bring to boil. Simmer approximately 20 minutes and drain. Place drained potatoes and garlic in mixing bowl. Add remaining ingredients, beginning with only 2 tablespoons of milk. (Adding more milk will thin the mashed potatoes.) Beat with mixer until smooth.
Yield: 2-4 servings
Serving size of 1/2 cup = 1 carbohydrate choice
